For one thing, this soup is hearty. For another, it’s nutritious and delicious. Instead of serving something familiar, surprise your family with this incredible soup.

Ingredients

For this soup, you’ll need the following ingredients:

  • 1 pound of boneless and skinless chicken breasts (Rotisserie chicken makes a great alternative)
  • 2 cups dry medium-sized egg noodles (homemade egg noodles make this soup taste even better)
  • 1 ½ tablespoon of olive oil
  • 3 garlic cloves (minced)
  • 1 ½ cups yellow onion (chopped)
  • Two 14.5-ounce cans of chicken broth
  • 1 1/3 cups each of carrots and celery stalks (chopped)
  • 1/4 cup of butter
  • 2 bay leaves
  • 3 tablespoons of fresh parsley
  • 1/4 cup plus 2 tablespoons all-purpose flour
  • 1/3 cup heavy cream
  • 2 ½ cups of milk (either 2 percent or whole)
  • Salt and pepper to taste

Directions

To make this amazing creamy chicken noodle soup, follow these easy steps.

Step One

If you use store-bought egg noodles, make them using the instructions on the package. Afterward, set them aside.

Step Two

Next, heat the olive oil in a large Dutch oven. Then, add the chopped onion, carrots, and celery. Now, sauté them for three to four minutes until they’re tender. Then, add the garlic, followed by sauteing for an additional minute.

Step Three

To that, you’ll add the chicken broth, bay leaves, and parsley. In addition, season with salt and pepper. Next, you’ll put the chicken breasts in the pot. Bring the ingredients to a boil on medium-high heat.

Step Four

Once the soup begins to boil, reduce the heat to medium. Cover the pot with a lid and cook for roughly 15 minutes. Remember, the goal is to both cook and tenderize the chicken. At that point, take the chicken out of the pot and place it on a cutting board. Allow the chicken to rest for five minutes. Then, shred it with a knife or fork.

Step Five

Now, it’s time to make the roux. This is what gives this soup its creaminess. First, melt the butter in a saucepan. Use medium heat to prevent the butter from burning. Second, add the flour. Whisk the butter and flour continuously for about one and a half minutes while it cooks.

Step Six

To the butter and flour, add the cream. For this, you’ll need to bring the ingredients to a boil on medium heat. Again, whisk continuously. Next, slowly add the milk. The goal is to blend the ingredients and eliminate any lumps.

Step Seven

For this final step, pour the roux into the soup. As before, you’ll need to stir the combined ingredients continuously. Then, add the shredded chicken. Simmer for a few minutes to heat through and then serve.
